Whole bean or ground coffee: which should I buy?

Whole beans stay fresh far longer, because grinding exposes much more surface to air and aroma fades quickly. If you have a grinder, always buy whole bean. If you don't, buy small bags ground for your specific brewer and finish them within two to three weeks.

Coffee is at its most aromatic just after grinding. Those aromas are volatile. Once the bean is broken into thousands of small particles, they escape quickly and the coffee also takes up moisture and stale smells from the air.

When pre-ground is the right call

How to order ground coffee well

  1. Tell the roaster your exact brewer, not just "filter".
  2. Buy 250 g or less at a time.
  3. Ask for it to be ground close to dispatch, which most specialty roasters do anyway.
  4. Store it airtight, away from light and heat, and finish it within two to three weeks.

Tip: Drip bags are a clever middle ground. Each bag is ground and sealed separately, often nitrogen flushed, so the last one tastes closer to the first.

How long does ground coffee stay fresh?

It stays pleasant for around one to two weeks after opening and fades steadily after that. Whole beans hold up for several weeks.

Can I grind coffee in a mixer grinder?

You can in a pinch, but blades make uneven particles, so the cup tastes both bitter and sour. Pulse briefly and use it for forgiving brewers like French press or kaapi.

Is drip bag coffee any good?

Good drip bags from specialty roasters are surprisingly nice. They won't match a freshly ground pour-over, but they beat most instant coffee by a long way.
