How do you brew light roasts well?

Use water at 94–96 °C, grind a step finer than you would for a medium roast, and brew at about 1:15 to 1:16. Rest the beans 7–14 days after the roast date. If the cup is sour and thin, grind finer or brew longer; if it is harsh and drying, go coarser.
A light roast has spent less time in the roaster, so the bean is harder and the flavour is locked in tighter. That is also why it tastes of fruit, flowers and tea rather than roast. Your job is to pull that flavour out without the sourness that comes from under-extraction.
The three levers that matter
- Heat: water at 94–96 °C, or straight off the boil for very light roasts. Cooler water leaves light roasts tasting sour.
- Grind: finer than for darker coffee. On a 1Zpresso K-Ultra, start at 78 clicks for V60 and 68 for AeroPress.
- Time: a slightly longer contact time helps. A V60 that finishes at 3:00–3:30 is a good target for 15 g.

A reliable V60 recipe
- Grind 15 g at 78 clicks on a K-Ultra (fine, like coarse sand).
- Rinse the paper with hot water and discard the rinse water.
- Start a timer. Pour 45 g of water at 95 °C and swirl so all the grounds are wet. Bloom for 45 seconds.
- Pour to 150 g by 1:15, in slow circles.
- Pour to 250 g by 1:45. Give the cone one gentle swirl to flatten the bed.
- Let it drain. Aim to finish between 3:00 and 3:30. Taste, then adjust the grind next time.
Tip: Freshly roasted light coffee is often better after a week of rest. In the first few days the gas makes the bloom bubble up violently and the cup can taste sharp and hollow.
Troubleshooting light roasts

Why does my light roast taste sour?
Almost always it is under-extracted. Grind finer, use water closer to boiling, or extend the brew slightly.
Can I brew a light roast in a French press?
Yes. Use water just off the boil and a longer steep of about 4–5 minutes before skimming. It will taste rounder and less crisp than a pour-over.
Is boiling water too hot for coffee?
Not for light roasts. Water cools as soon as it leaves the kettle, so off-the-boil water usually lands in the right range.
Do light roasts have more caffeine?
The difference is small. By weight it is roughly the same, so dose matters more than roast.
