Roast dates explained: when is coffee freshest?

Freshly roasted coffee needs a few days to rest before it tastes its best, then stays at its peak for roughly two to four weeks for filter brewing. Espresso often benefits from a slightly longer rest. Buy coffee with a printed roast date, not just a best before date.
Specialty roasters print the roast date because coffee changes quickly after roasting. Supermarket coffee usually shows only a best before date, often a year out, which tells you very little about taste.
Why coffee needs to rest
Roasting leaves a lot of carbon dioxide trapped inside the bean. In the first days it escapes fast. Too much gas makes brewing uneven, with bubbly, sour or sharp cups. That is why most specialty bags have a one-way valve and why roasters suggest waiting a few days.
A rough freshness window

These are guides, not rules. Light roasts often need longer rest than dark roasts, and some naturals and anaerobics keep improving for weeks.
Tip: Indian roasters often ship within a day or two of roasting, so your bag may arrive right at the start of its window. Brew a cup on day one, then again on day ten. You'll taste the change.
Signs a coffee has gone stale
- Little to no bloom when hot water hits it.
- Aroma that smells flat, papery or like cardboard.
- Cups that taste hollow no matter how you change the recipe.
- Oily, rancid smell on very dark roasts.
Buying for freshness
- Buy only what you'll drink in about a month.
- Prefer roasters who roast to order or roast weekly.
- Check the roast date on arrival.

Is coffee bad after the best before date?
It isn't unsafe, but it will likely taste flat. For specialty coffee, the roast date is the date that matters.
Can coffee be too fresh?
Yes. In the first two or three days it is very gassy and can brew unevenly. A short rest usually helps.
Does a one-way valve keep coffee fresh forever?
No. It lets gas out without letting much air in, which slows staling, but coffee still fades once you open the bag.
