Why does my coffee taste flat?

The most common causes are stale or pre-ground coffee, very soft RO water with almost no minerals, and under-extraction from a coarse grind or cool water. Check the roast date first, then your water, then grind a little finer. Most flat cups get better after one of those three changes.
A flat cup tastes of coffee but not much else. No sweetness, no fruit, no finish. It is frustrating, especially with a bag that promised berries or caramel. The good news is that the fix is usually simple.
Check these first
- Freshness: look for a roast date, not just an expiry date. Most coffees taste best from about 1 to 6 weeks after roasting.
- Grinding: pre-ground coffee loses aroma within days of opening. Grinding just before brewing makes a huge difference.
- Water: many Indian homes use RO purifiers. Very low-mineral water extracts poorly and tastes dull.
- Extraction: a coarse grind, cool water or short brew leaves the good stuff behind.

A quick reset routine
- Pick a bag roasted within the last 3–4 weeks.
- Grind it fresh for your brewer using the grind chart.
- Use a scale and a clear ratio, for example 15 g coffee to 250 g water.
- Use water just off the boil for light roasts, about 92 °C for darker ones.
- Taste as it cools. Sweetness and fruit often show up once the cup drops below drinking-hot.
- If still flat, change your water before changing anything else.
Tip: Monsoon humidity is hard on coffee. Keep the bag's one-way valve sealed, squeeze out the air, and store it in an airtight container away from the stove.

Can old coffee be revived?
Not really. Grinding a little finer and using slightly more coffee can help, but lost aroma does not come back.
Should I store coffee in the fridge?
Usually not. The fridge adds moisture and odours. A sealed jar in a cool cupboard is better for bags you will finish in a few weeks.
Is RO water bad for coffee?
