Same estate, different roaster: why they taste different

The same estate's coffee can taste very different from two roasters because each chooses its own roast level, development and profile, and because the beans may be from different lots or harvests. Freshness and resting time also change the cup a lot. Comparing two roasters on one estate is one of the best ways to learn what a roaster brings.

Resting and freshness

Freshly roasted beans release a lot of carbon dioxide. Brewed too soon, they can taste sharp and bubbly and extract unevenly. Most coffee is best from a few days to a few weeks after roasting. Light roasts often want a little longer rest, darker roasts a little less.

  1. Buy two bags from the same estate from two roasters.
  2. Check both roast dates and brew each at a similar age.
  3. Use the same brewer, ratio, grind and water.
  4. Taste side by side as they cool and note the differences.
