What water should I use for coffee in India?

Coffee tastes best with clean, moderately mineral water, roughly 75 to 150 ppm of hardness by commonly cited SCA guidance. In India, borewell water is often too hard and RO water is often too soft. Mixing RO with filtered tap water, or using a mild bottled water, usually fixes it.
A cup of coffee is almost all water, so the water you use changes the flavour a lot. It's often the hidden reason a great bag tastes flat or harsh at home.
What minerals do
Minerals like calcium and magnesium help pull flavour out of coffee. Bicarbonate buffers acidity. Too little mineral and coffee tastes flat, sour or hollow. Too much and it tastes chalky, dull and bitter, and scale builds up in your kettle.

Simple fixes that work
- If you use RO, try mixing it with filtered tap water, starting with about half and half.
- If your RO has a TDS or mineral adjustment, turn it up a little.
- If your tap or borewell water is hard, run it through a carbon filter jug and blend with RO.
- Try a mild bottled water for a week and compare. If coffee suddenly tastes brighter, your water was the problem.
- Always start with fresh, cold water, not water reboiled many times.
Tip: A cheap TDS meter is a useful guide, but your tongue is the real test. Brew the same coffee with two waters side by side.

- White scale builds up in your kettle quickly. Your water is hard.
- Every coffee tastes sour or thin no matter how fine you grind. Your water may be too soft.

Is RO water bad for coffee?
It's safe, but often too soft for good extraction, so coffee can taste thin or sour. Blending it with some filtered tap water usually helps.
Can I use distilled water?
