Arabica vs robusta: what's the difference in India?

Arabica is the sweeter, more aromatic species with higher acidity, grown on the higher slopes. Robusta is hardier, has roughly twice the caffeine and tastes heavier and more bitter, and makes up around 70% of India's crop. Indian robusta, especially washed robusta, is among the cleanest in the world.

Two species, not two roasts

Arabica and robusta are different plants. Coffea arabica likes cool, high ground and is fussy about disease. Coffea canephora, sold as robusta, grows lower and warmer, shrugs off pests and yields more. Roast level changes both, but the species sets the starting point.

Why Indian robusta is worth a second look

Most of the world's robusta is dried as whole cherry and sold cheap. India grows much of its robusta under shade, and many estates wash it. Washed Indian robusta is clean, chocolatey and far less harsh than the robusta most people have met. Italian espresso roasters have prized it for decades for its crema and body.

Which should you buy?

If you drink black coffee from a pour-over or AeroPress and want to taste fruit and origin, start with arabica. If you drink milk coffee, filter kaapi or strong espresso, robusta or an arabica and robusta blend gives you the punch and body you are used to.

Tip: Many classic South Indian filter blends are arabica with some robusta and chicory. If a pure arabica filter coffee tastes thin to you, a blend with robusta is the fix.

Questions

Is robusta bad coffee?

No. Badly grown and processed robusta is harsh, but well grown, washed Indian robusta is smooth, chocolatey and excellent in milk drinks and espresso.

Does robusta really have more caffeine?

Yes. Robusta beans carry roughly twice the caffeine of arabica, which is part of why the plant resists pests so well.

Why does India grow so much robusta?

Much of India's coffee land sits at lower, warmer elevations where arabica struggles with pests and disease. Robusta thrives there and yields more.

What about liberica and excelsa?

They are separate, rarer species. India grows very little of either, though you will occasionally see small lots.
