Thailand coffee
1000–1500 m · picked November to March · Arabica in the north, robusta in the south
Arabica came to the northern hills in the 1970s through royal projects that replaced opium poppies. The hill-tribe cooperatives around Doi Chaang now run their own mills and cafés, and Bangkok's café scene buys most of the crop.

In the cup: Mild, nutty, milk chocolate, with soft fruit in honeys.
Next to Indian coffee: Catimor-heavy like many Indian estates, and roasted the same way: Thai coffee is comfortable territory for an Indian palate, with a touch more sweetness.
