Ethiopia coffee

Where arabica comes from: the plant still grows wild in the forests of the south-west, and most farms are a hectare or less, selling cherry to a local washing station. Ethiopia drinks about half of what it grows, in the coffee ceremony that is part of daily life.

- Thousands of local landraces (heirloom), often sold by lot number such as 74110 and 74158

- Washed and natural, increasingly anaerobic
In the cup: Washed: jasmine, bergamot, lemon, black tea, light and delicate. Natural: blueberry, strawberry, wine, heavy and sweet.
Next to Indian coffee: The opposite end of the spectrum from a Chikmagalur washed: lighter body, far more acidity and florals. Indian roasters import more Ethiopian coffee than any other, and it is the usual first step for someone exploring beyond India.
