Kobe's best-known coffee house began in 1948 as a small shop and became one of the early cafés in Japan to roast its own beans. It brews with Miyamizu water from Nishinomiya; its Kitano branch opened in 1974 as Japan's first members-only café.

Shichiro Inoda began selling imported coffee in 1940 and opened his coffee shop in 1947. Staff in white jackets and bow ties still serve the Arabia no Shinju blend with milk and sugar already added unless you say otherwise.

Opened in 1948 and lit in blue, with no background music, Soirée still keeps its post-war room. Its cups carry line drawings painter Seiji Tōgō made for the shop, and the jewel-coloured jelly punch is the famous order.
Open since 1934, Tsukiji is an elegant room of antiques where classical music plays. Its signature is the Vienna coffee under a cap of whipped cream, said to be the first served in Kyoto.

Opened in 1950 near the Kawaramachi-Sanjo crossing, Rokuyosha is two shops in one building: the ground-floor café and a basement shop that has served its own roasted coffee since the mid-1980s. Folk singer Wataru Takada was said to come almost every day.

Founded in 1934 by Masaichi Tateno and redesigned in 1941 to look like an ocean-liner salon, with stained glass and a white domed ceiling. In 2003 it became the first café in Japan registered as a national Tangible Cultural Property.

Sadao Ibuki founded Marufuku in 1934; the Sennichimae flagship has operated since 1946. Its dark, strong house roast and thick hotcakes are Osaka standards, and novelist Seiko Tanabe set a story here.

Mamoru Taguchi opened Bach in 1968 in working-class Minami-Senju and turned it into a school for roasting. His insistence on picking out defective beans and controlled roasting shaped a generation of Japanese independent roasters.

Opened in Ginza in December 1911 with beans supplied by the São Paulo state government to promote Brazilian coffee, it sold a cup for five sen and drew writers such as Ryūnosuke Akutagawa. The 1923 earthquake ended the original chain; today's Ginza shop reopened in 1970.

Ichiro Sekiguchi opened this coffee-only shop in 1948 and ran it until his death in 2018 at 103. He championed ageing green beans for years, even decades, before roasting, and the menu still lists vintage coffees alongside flannel-drip brews.

A neighbourhood kissaten in a pre-war wooden building on the corner of Yanaka. It closed in 2006 after the owner's death and was revived by a local NPO in 2009, keeping the old sign and counter.

A cabin-like kissaten from 1955 with totem poles at the door, run for decades by founder Fumio Suzuki. Students and book-hunters come for coffee, cream soda and huge plates of Napolitan spaghetti (served at the sister shop next door).

Shiseido began as a Ginza pharmacy and added a soda fountain in 1902, serving soda water and ice cream that were still rare in Japan. Its third-floor Salon de Café in the Ginza Shiseido building still puts parfaits and other sweets at the centre.

Konparu opened its first café in 1947 and its Osu shop is the flagship of a small local chain. It is a good place to try Nagoya's café culture: thick sandwiches and iced coffee you pour over a glass of ice yourself.

A dark wood kissaten a few minutes from Shibuya Station, known for charcoal-roasted beans and hand-poured coffee. The barista picks a cup from a wall of several hundred to suit each guest.
A Ueno kissaten that has been around for over 40 years, furnished with antiques, couches and a big Shōwa-era chandelier. Besides coffee it serves sandwiches, curry rice, omurice, cakes and parfaits.

Fukuoka's REC Coffee is headed by barista Iwase, who won the Japan Barista Championship in 2014 and 2015 and placed second at the 2016 World Barista Championship.

Leaves launched in Kuramae in 2016 and began roasting in 2019 at this roastery-café, which opens only a few days a week so the team can focus on roasting. It was a nominee in The World's 100 Best Coffee Shops 2025 voting.
